Chocolate Microwave Mug Cake (Low FODMAP, Gluten Free, Diary Free)

Craving chocolate cake, but not the time it takes to make one? You probably already have all the ingredients you need to make this seriously delicious mug cake in the microwave. Best of all, it's low FODMAP, gluten free, and dairy free.

Ingredients

  • ¼ cup gluten free all purpose flour

  • ¼ cup white sugar

  • 2 tbsp unsweetened cocoa powder

  • ⅛ tsp baking soda

  • ⅛ tsp salt

  • 3 tbsp almond milk

  • 2 tbsp canola oil

  • 1 tbsp water

  • ¼ tsp vanilla extract

  • 1 tbsp Enjoy Life vegan chocolate chips (optional)

Steps

  1. Mix all dry ingredients in a mug

  2. Add all wet ingredients to the dry ingredient in the mug and mix together

  3. Add chocolate chips, but do not mix with batter

  4. Microwave for 1:45 or until done in the middle

Notes

Make sure to use a tall mug and keep an eye on it while it's in the microwave to be sure the batter doesn't spill over.

Although all the ingredients in this recipe are Low FODMAP, you should carefully test due to the amount of oil. Oil has no FODMAPs, but is high in fat, which can affect gut motility and therefore, cause IBS symptoms in some people.
