Low FODMAP “Christmas”

In my family, Christmas is both a holiday and food! This very simple recipe was passed down from my grandmother and since she always made it around Christmas time, she called it Christmas. That's what my mom grew up calling it and what my brother and I grew up calling it. So, now I'm passing it on to you. Traditionally made with Cream of Wheat, my Low FODMAP Christmas recipe is made with Cream of Rice and sprinkled with cinnamon sugar. Enjoy!

Ingredients

  • ⅛ cup white sugar

  • ¼ tsp cinnamon

  • 1 cup water

  • ¼ cup Cream of Rice

Steps

  1. Mix the sugar and cinnamon in a bowl and set aside

  2. Boil the water

  3. Add the Cream of Rice

  4. Turn the heat to low and stir until the mixture comes together

  5. Quickly spread the cooked Cream of Rice on a plate or shallow bowl so it creates a slightly thin layer

  6. Sprinkle the cinnamon sugar over the Cream of Rice either using a flour sifter or a spoon
