Chunky & Fresh Low FODMAP Salsa

Finding Low FODMAP Salsa in Stores

I have yet to find salsa in stores that doesn't have garlic or onions. If you do find salsa that qualifies as Low FODMAP, you'll probably be successful shopping online. Two Low FODMAP salsas come to mind - Casa De Sante's Chunky Salsa and Fody's "Just a Kick" medium salsa.

Make Your Own Low FODMAP Salsa

It's pretty simple to make your own salsa and you can control the ingredients to ensure it's Low FODMAP and the perfect level of spiciness. You can use fresh ingredients, packaged ingredients, or a combination of both. I prefer to use as many fresh ingredients as possible!

Ingredients

  • 4 roma tomatoes

  • Salt

  • 2 limes

  • 5 stems of green onions

  • 1 jalapeño (optional - you can use any type of peppers or substitute with chili powder or red pepper flakes depending on the level of spiciness you desire/can tolerate)

  • 3 sprigs of fresh cilantro

  • Black pepper to taste

  • Garlic infused olive oil (I prefer Garlic Gold Oil which you can also purchase on Amazon)

Steps

  1. Dice your roma tomatoes and place them in a bowl. Sprinkle salt until the tomatoes are well covered. Toss the diced tomatoes in the bowl so the salt is dispersed evenly. Let these sit for about fifteen minutes while you prepare the rest of the ingredients. The salt will soak up a lot of the liquid from the tomatoes so your salsa isn't too wet.

2. Cut your limes in half and set aside

3. Chop your green onions and throw away the white parts

4. Chop up your jalapeño and make sure you dispose of the seeds

5. Pull the leaves off of your sprigs of cilantro and throw away the stems

6. Toss everything in the food processor except the limes

7. Add your parsley, pepper, and a small amount of garlic infused olive oil (all to taste)

8. Now start adding your tomatoes, chop, add more tomatoes, chop, and squeeze the juice of your two limes before chopping again. You want your salsa to still be chunky so don't completely puree the mixture. Taste your salsa with a chip and then add more pepper, garlic infused olive oil, etc. as needed.

Expert Tip: To get the most juice out of your lime, use your teeth to squeeze!
